The cocktail class will teach you how to make a classic lychee martini – a fragrant mix of vodka, lychee juice and sugar syrup, poured over ice in a shaker. You’ll also get to make the house special Popo Trio cocktail. This one is a bit more complicated – muddled cucumber, gin, a splash of sake and a squeeze of lime juice.
Once your drinks are mixed, you can move on to the food. The dumpling making course shows you how to make a vegetarian shitake mushroom dumpling and a classic pork and lemongrass dumpling. And importantly, you’ll pick up three different styles of folding – a plain triangle for pan frying, a soup dumpling and a pleated crescent dumpling.
Then sit down to a proper feast of Vietnamese, Korean, Japanese and Chinese dishes, all best when washed down with a signature cocktail.
