You’ll start off by making some jalapeno poppers, stuffed with cheese, herbs and wrapped in bacon. Then you’ll learn the art of the dry rub, applying a mix of spices to beef brisket, pork shoulder or pork ribs to seal in the juices and create a deliciously tender and moist piece of meat, despite the long cooking time.
The other secret is the Texas Crutch – wrapping the smoked meat in foil with butter and a splash of apple cider, then putting it back on the heat. The meat soaks up the liquid and the result is spectacular.
Every class ends with a slap-up sit-down lunch, eating the best BBQ you’ve ever made.
