Smoke & Sizzle

Keen to learn the way of the grill from a true American-style BBQ guru? Then head to BBQ School in Centennial Park and meet the master Ben Farley.

You’ll start off by making some jalapeno poppers, stuffed with cheese, herbs and wrapped in bacon. Then you’ll learn the art of the dry rub, applying a mix of spices to beef brisket, pork shoulder or pork ribs to seal in the juices and create a deliciously tender and moist piece of meat, despite the long cooking time.

The other secret is the Texas Crutch – wrapping the smoked meat in foil with butter and a splash of apple cider, then putting it back on the heat. The meat soaks up the liquid and the result is spectacular.

Every class ends with a slap-up sit-down lunch, eating the best BBQ you’ve ever made.

Once you’ve got the skills, you’ll need provisions, so head to the Australian Meat Emporium in Alexandria. Not only is there every rub, sauce and charcoal you could dream of, but their cool room is a sea of meat with every imaginable cut just ready and waiting for you.

Learn the skill, get the meat – then hit the grill. Let’s barbeque!
