There’s a brand-new pub you really need to add to your destination dining hitlist – The Wilton at Bingara Gorge.
Located just an hour south of Sydney and 30 minutes from Wollongong, The Wilton is perfectly placed to provide a memorable country pub experience for families from the Macarthur region and beyond.
The vibe is local and relaxed, with an elevated pub menu including some dishes that hark back to some real favourites of yesteryear. Start with the prawn toast, already a signature dish that would rival any Chinese restaurant in the city. Or try a more modern starter like the Zero-Waste Pesto dip made from garden greens, or the Raw King Ora Salmon, with yuzu gel, served with prawn crackers.
There’s a touch of nostalgia in some of the mains, with the regular chicken schnitty being usurped by Chicken Kiev, stuffed with a delicious garlic butter. Also a standout is the ricotta gnocchi, served with broccoli pesto.
And if you love meat, the beef, dry aged on site, is so buttery it will literally melt in your mouth. Another winner is the 12-hour slow-cooked lamb shoulder, which is like a warm hug.
