Using French culinary techniques and drawing on his own cultural heritage and that of his team of chefs, Executive Chef Federico- originally from South America- crafts an ever-changing, seasonal menu, using produce from the on-site kitchen garden.
Go- to dishes include starters of charred Fremantle Octopus, served with fennel kimchi and chilli sauce, and WA scallops with miso and celeriac. For the mains, the 18 hour smoked wagyu brisket- with a marble score of 8+, served with onions and horseradish.
