From Venice to Palermo, there are port cities all over Italy and each one has their own regional flavours and specialties. It’s a lot to get your tastebuds around, but thanks to much loved chef Giovanni Pilu, you can do it at Flaminia, his brand-new restaurant overlooking Circular Quay.
Located in the Pullman Quay Grand Hotel, Flaminia captures the simple ingredients from the different ports, to create complex and memorable flavours. There are five cities represented – Venice, Palermo, Genova, Cagliari and Naples – and there are antipasti, pasta, mains and desserts from each.
So you can dine in a particular region, or take a tour around Italy – course by course. And there’s a dedicated crudo bar with regional dressings to kick things off – tomato and basil for Palermo, lemon and oil for Naples and pickled fennel and bottarga for Cagliari.
Then move on to dishes like Mozzarella in Carozza – molten cheese inside fried bread, a Naples street-food staple, Spaghetti Alla Bottarga from Sardinia, or Merluzzo – Murray Cod with spinach and lemon from Venice.
